Lumberlandia Pine Nut and Herb Bread

Ingredients:

  • 3 cups all-purpose flour
  • 1 1/2 cups warm water (110°F/45°C)
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup pine nuts
  • 1/2 cup mixed fresh herbs (rosemary, thyme, and oregano), finely chopped
  • 1 tablespoon honey or maple syrup (for a touch of Lumberlandia sweetness)

Instructions:

Activate the Yeast
  1. Activate the Yeast: In a small bowl, mix the warm water, yeast, and honey. Allow it to sit for 5-10 minutes until frothy.
  2. Prepare the Dough: In a large mixing bowl, combine the flour and salt. Create a well in the center.
  3. Mix: Pour the yeast mixture and olive oil into the well. Use a wooden spoon to gradually incorporate the flour into the liquid.
  4. Knead: Turn the dough onto a floured surface and knead until smooth and elastic, about 10 minutes.
  5. Add Flavors: Gently fold in the pine nuts and chopped herbs until evenly distributed in the dough.
  6. First Rise: Place the dough in an oiled bowl, cover with a clean cloth, and let it rise in a warm spot for 1-2 hours, or until doubled in size.
  7. Preheat Oven: About 30 minutes before your dough is done rising, preheat your oven to 375°F (190°C).
  8. Shape the Loaf: Turn the risen dough onto a floured surface and gently shape it into a round loaf.
  9. Second Rise: Let the loaf rest for another 20 minutes.
  10. Bake: Place the loaf on a baking sheet lined with parchment paper. Use a sharp knife to make a few slashes on the top. Bake for 35-40 minutes, or until the loaf sounds hollow when tapped on the bottom.
  11. Cool and Serve: Allow the bread to cool on a wire rack for at least 30 minutes before slicing. Serve warm, perhaps with some freshly made soup, just like our digital hunks and lumberjacks would!
